Getting in your veggies.

You probably know at least one person who has said it- “I don’t eat vegetables.” While some vegetables have a distinct taste, they certainly deserve some space on your plate. Green vegetables are the most popular, and it’s easy to see why. Greens have a ton of health benefits and with the right seasoning- like our Luigi’s Revenge, your vegetables just might go from side dish to main course.

My favorite way to cook veggies is in a wok pan. I coat the pan in cooking spray, add fresh garlic, and sprinkle Uncle T’s spices. You can also sauté greens with extra virgin olive oil. Seasoned the right way, you can get the pickiest eater, including kids, to eat their veggies.

A diet rich in greens decreases the risk of obesity. Many green vegetables are high in fiber and help you stay fuller longer. This can help dieters stay on track with low carb/low cal diets while still providing essential vitamins and minerals like A, C, B-9, K, selenium, potassium, and calcium. In addition to combating obesity, consumption of various greens can help reduce the risk of blood clots, assist in thyroid gland function, reduce the risk of heart disease, and prevent degenerative eye disorders. Popular greens include green beans, romaine lettuce, spinach, broccoli, and kale. No matter which green you choose, they are an integral part of any diet.
